Mexico is by far the leading supplier of limes to the United States marketplace, sending millions of pounds north on a weekly basis, and basically cornering the market. Production of all limes in the U.S. is limited and organic limes from any point of origin are in chronic short supply. Enter Bill Vogel, president of Vision Produce Company, a Los Angeles-based wholesaler.
Several years ago, Peri & Sons Farms, the Yerington, Nevada-based onion specialist started adding organic acreage to the point that the firm now has the ability to offer its own organic onions on a year-round basis, or at least 11-months of the year.
Long gone are the days when the white button mushroom dominated the mushroom category. After years of “exotic” varieties found only in natural foods stores---specialty mushrooms---now revered for their medicinal properties as much as their culinary prowess, have gone mainstream and consumer demand has exploded.
